Ingredients |
1 pound pinto beans 1 ham shank 1 large onion, chopped 2 whole fresh green chilies, seeded and finely chopped 1 teaspoon each cumin, oregano, and chili powder 3 cloves garlic, minced 1 teaspoon salt |
Directions |
Rinse the beans and place them in a large pot with water to cover plus 3 inches. Let them soak for several hours or overnight.
Add the remaining ingredients to the pot. Bring the water to a boil, reduce heat, cover and simmer for about 4 hours. Remove the lid and simmer for 1 additional hour to reduce the liquid.
Remove the ham shank, cut the meat from the bone and return it to the pot.
Serve hot or at room temperature. |
